Lost salad

Did Sayid really kill him?

This dinner of salad and tostadas was so good I almost didn’t care. Almost.

Lost salad (recipe below) + tostadas with home-cooked corn tortillas; refried black beans; Vegan Explosion queso; pan-seared red pepper, onion, and jalapeño relish; and sliced avocado.


Lost Salad

1 regular head of broccoli, broken into bite-sized pieces
1 bunch of shredded kale (about 3 cups)
handful of raisins to taste

Dressing

1/4 cup raw cashews
1 Tbsp raw agave nectar
2 tsp raw apple cider vinegar
1/4 red onion (I used plain onion here)
1-2 cloves of garlic, minced
dash sea salt
splash of water

1. Place kale, broccoli, and raisins in a large bowl.

2. Blend the dressing ingredients in a blender or food processor until the mixture reaches your desired consistency, adding more water for a more liquid dressing.

3. Pour over the greens and mix well, preferably with clean hands.

Be sure to thoroughly debug kale, especially if you are using the curly kind, and particularly if your kale is organic.

Raw.

Makes enough for about 8 servings. I had to put it in two bowls, and one is still in the fridge!
